Masala Vada/ Chattambade

Masala Vada/ Chattambade is a south Indian snack. Crispy outside and soft from inside. Great to have with tomato onion chutney. Even you can have it with any chutney of your choice or as it is. In my family we love to have it with Gujarati Lemon chutney.

 
 
 
 
Ingredients:

Channa Dal(Bengal Gram) ---------- 1 cup
Onion ----------------------------------- 1 medium chopped
Green chilies ------------------------- 2-3 finely chopped
Coriander leaves --------------------- 1/2 cup chopped
Ginger --------------------------------- 1/2" finely chopped
Garlic ---------------------------------- 2-3 pods finely chopped
Sauff (Fennel seeds) ----------------- 1 tsp
Salt ------------------------------------ to taste
Curry leaves ------------------------- 5-7 chopped
Oil ------------------------------------ to fry


Take channa dal in a bowl, wash 2-3 times. And soak for at least 4-5 hrs.

 
 
Washed the soaked dal and keep 1/4 of the dal ungrounded, to be mixed later. Grind the remaining dal into a paste with very less water.

Mix all other ingredients except oil.  Also add the ungrounded dal into the paste.

Heat oil in a pan/ khadai. Shape the paste into the desired shape and deep fry the vadas. Enjoy them with the chutney of your choice.




 

Tomato Onion Chutney( to eat with Idli, Dosa)

Tomato Onion Chutney which is served with south indian preprations in restaurants. This Chutney tastes good with Dosas, Appa, Uttapam, Pesarattu etc.



Ingredients:

Tomato ------------------------------------------- 3 medium size
Onion --------------------------------------------- 2 medium size
Split black gram skined(Dhuli urad dal) ----- 1 tsp
Coriander seeds(Sabut dhania) ---------------- 1/2 tsp
Hing ----------------------------------------------- 1/4 tsp
Jaggery -------------------------------------------- Marble sized ball
Dry Coconut -------------------------------------- 1 tsp scraped
Red chillies --------------------------------------- 2-3
Oil ------------------------------------------------- 1 tsp
Salt ------------------------------------------------ 1 tsp


Method:

Chop onion and tomatoes in big pieces.

Take a pan and dry roast* urad dal, coriander seeds, red chillies, coconut one by one. Coconut should not be roasted like other ingredients. Just put it in the hot pan and it will be done.

Add oil in the same pan. Now add onion and tomatoes init. Cover and cook for 1-2 minutes or until they are soft not mashy on low flame. When done cool tomato-onion.

In the mixture jar take all the dry roasted ingredients and hing. Grind it coarsely. Now add tomato-onion, salt, jaggery and grind in to a paste. Yummy tomato Onion chutney is ready to enjoy.


* While roasting if you over do any of the ingredients it will taste bitter.
